Japanese style spaghetti

Nope, this is not a Yakisoba (though it may look like it!), but it is a Japanese style spaghetti I made over the weekend.

I once had a similar dish at a local Japanese restaurant and I thought, why not try making this at home?

For an extra kick, I added anchovy paste, but it is an optional :)


Ingredients: for 2 serving

200 grams of spaghetti
1 garlic cloves, crush
1 tablespoon butter
1 tablespoon olive oil
king oyster mushroom, cut into bize size pieces.
shitake mushroom, cut into bize size pieces.
broccoli
seaweed (for garnish)
1 tablespoon soy sauce
1 tablespoon mirin
1 tablespoon sake
1 teaspoon anchovy paste (optional) 
2-3 tablespoons pasta water

Directions:

While cooking the spaghetti, heat oil and butter into the pan. Add garlic, anchovy paste, mushroom, broccoli and pasta water.

Add cooked spaghetti into the pan. Season with soy sauce, mirin and sake. Mix spaghetti thoroughly.

Divide between plates, garnish with seaweed.  Enjoy!

Chocolate Chip Cookies


During the past holidays, I got a chocolate chip cookies recipe from a friend. She said it is one of the best chocolate chip cookie recipes ever. She was right! I bought these to a dinner party, and it was a HIT! I'm baking them again this weekend :)

Ingredients:
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped walnuts

Directions:
Preheat oven to 350 degrees F (175 degrees C).
Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

My holidays has been very relaxing! I spent time at sayamako reservoir with my family. The weather was so nice and clear, I could see Fuji Mountain from the lake!
